Blueberry Mug Muffin! _ Extra moist and extra crumbly!! _ For my first mug muffin I decided to go with a classic! Everyone loves a good blueberry muffin. My absolute favorite are blueberry mammoth muffins from Perkins! 🤤 I haven’t had one of those though since I was in high school. 🤷🏼‍♀️ _ This muffins is crumbly, moist, and super flavorful! _ Recipe: 🔵 1 Tbsp Coconut Flour 🔵 1 Tbsp Almond Flour 🔵 1/4 tsp baking powder 🔵 1/2 Tbsp melted coconut oil 🔵 1 Tbsp sour cream or Greek yogurt 🔵 2 Tbsp @swervesweetie 🔵 1/2 tsp vanilla extract 🔵 1 Tbsp egg whites 🔵 20 blueberries 1) mix dry ingredients 2) mix wet ingredients 3) mix wet with dry ingredients 4) mix blueberries into batter. 5) spoon into a greased mug 6) microwave 2 minutes, add another 30 seconds if needed. _ Side Notes: 1) Let cool completely if you want it to stay together 2) Not knit did the blueberries explode in the microwave they also rose to the top. I wasn’t in the mood to cook tonight so I picked up a couple of easy ingredients to toss for a healthy vegetarian salad. The salad is also good for leftovers as well. I was only fixing it for myself, but if I was serving it to a larger group I could add some sliced avocado or protein on top. You could also add a few tostitos chips. I chopped some lettuce,cilantro,mini sweet peppers,red onion, and cucumbers. I then rinsed a bag of frozen sweet corn under running water and combined that with my chopped ingredients. Next I drained a can of black beans and tossed them in. I seasoned the mixture with some ground cumin and garlic powder. I sprinkled a little bit of salt and pepper and dressed it with olive oil and red wine vinegar. NUTTY MAPLE GRANOLA 🌻💛 This was my first time winging it in the kitchen and I had so much fun! Literally combined all the things that I like most in a good granola and wacked it in the oven 😛👌🏼 Recipe below 👇🏼 (Vegan, Soy Free) 1C Buckwheat 1/4C Flax Seeds 1/4C Sunflower Seeds 1/4C Decsicated Coconut 1/2C Whole Almonds 1/2C Roughly Chopped Walnuts Pinch of Salt Pinch of Cinnamon 2Tbs Coconut Oil 1/2C Maple Syrup (I did 1/4 cup but ended up a bit crumbly so half will make it more into clusters) Preheat oven to 180C fan bake. Combine all dry ingredients then add coconut oil and maple syrup. Stir to combine then place evenly on lined baking tray. Bake for 20 mins (turn once at about 10 minutes), then take out and leave to cool completely.

Gather all ingredients. 2. In a large bowl, add kale, 2 tbsp of olive oil and a 1/2 tbsp of salt. Massage kale with hands until soft. 3. Add nuts, lentils, dried fruit and apple. Whisk the honey, vinegar and oil together and pour over kale mix and toss to coat evenly. Te lo digo, no hay forma más rica de comer la coliflor, y sin que huela toda la casa!!! Claro, porque no está hervida, la he preparado al horno, bien lavada, cortada en flores, y bañada en una mezcla de harina de garbanzo, pan rallado, ajo en polvo, cebolla en polvo, cúrcuma, pimienta blanca, tamari y un chorrito de agua. En el horno ha estado, a 200° alrededor de 20 minutos. Queda brutal!!!! Para completar el plato (porque todo empezó con la coliflor), he preparado unos dados de tofu en salsa de berenjena (aprovechando un paté que hice hace un par de días), y una ensaladita de rúcula, tomates cherry y aguacate. Los lunes son menos lunes cuando comes muy rico 😍😍😍
