Pappardelle-Fancy cut Once I sheeted my Sunday pasta, I turned it into fancy cut pappardelle, using my 18 Sardinian Pasta/Pastry cutter. These tools are beautiful. They are solid brass and are hand made in Sardinia. Short story about how I came to be a distributor of these tools. I first saw these cutters a few years ago. No matter how many times I asked for information about where to get them, nobody would share that with me. I was slightly annoyed that I was seeing these beautiful tools but when I asked, those that highlighted them were silent. So, I decided I would do it myself. It took me several months, but I finally created a business relationship with a group of artisans in Sardinian, using my brain and google translate. Selling these don’t pay my bills, but I have the pleasure of being able to provide them to those who want them, and I ship worldwide. I have sold over 100 in a year, to over 15 countries, to many restaurants, Chefs and home cooks. Isn’t this all about showing and sharing?? Pasta and Dumplings-Lab 7 You would think that this Lab, where we made pasta dough, three cheese ravioli with Sage Beurre Noisette, potato gnocchi and spätzle would be the easiest, most enjoyable and least stressful for me. NOT QUITE! First, the Chef Instructor has a lot more culinary experience than me (obviously), so even though I know what I am doing in the world of pasta, it would be under Chef’s experienced and critical eye. Second, I am expected to follow provided recipes, exactly, with no variation. Third, (and this was the hardest part) I am expected to follow their provided techniques. I get it, this is school and for many, including me, we need to know the basics. SIGH. I was initially very excited about this lab, because, well PASTA! I was hoping to get a chance to maybe share some of what I know in terms of making the various doughs, types of flours, recipes, tools and techniques. This was not to “show off” but because this is really my passion, and students were asking and interested. Pasta making for me is not a “hobby, or something I do “on the side”. I worked HARD over the past few years to study and learn, and to develop basic and unique pasta classes. I have been so grateful that others have given me opportunities to teach what I love privately and in their businesses. It would have been fun and exciting for me to share just a bit of what I know, and get other students, most of whom had zero experience, more excited about the world of pasta. For me, school should be a place where you learn but also have the opportunity to freely share with classmates something that you are passionate about, even if what you have to share is different from what is being instructed. Isn’t that the point of education? This was not about critiquing the provided curriculum, but perhaps offering more information based on personal experience. More pasta today! The last four days have been a frenzy of hosting and traveling with friends and family. We had a pasta party on Saturday, went to Brisighella on Sunday, and Florence yesterday. I’m still sifting through photos an am officially pooped. 😴 😴 Here is another video from our pasta party on Saturday. With this durum wheat dough, we made orecchiette mainly but I showed my friend how to make strascinati, cavatelli, and cavatelli rigati/maloreddus as well. 👍 👍 There are so many shapes you can make with this dough! We focused on pasta technique and formation so kept the sauces simple and made a simple tomato basil sauce for this bowl of goodness. My daughter had fun making these shapes too and if you are just starting out with pasta making, these shapes are good to start with and are great for kids. Cavatelli especially are very easy. With this same dough we made Sagne ‘Ncannulate. Pasta Ripiena: agnolotti Agnolotti is a fun filled pasta shape hailing from the Piedmont region of Italy. It is made by folding a long, thinly sheeted rectangular pasta sheet over a piped or spoon dropped filling of meat, cheese or vegetables. After you have folded the pasta sheet over the filling, you then create individual agnolotto. I have seen the formation of each agnolotto done in at least 3 ways, and each way varies based on whether you are piping a long strip of filling along the pasta sheet, or piping individual filling portions onto the pasta sheet. The pasta can be formed as short, long, thin or as fat as you want. I love making agnolotti because once you get the hang of the method that works for you, you can really bang out a lot of filled pasta in a very short time. Farfalle Born to fly out of a simple semolina and warm water dough. Rolled thin, whimsically imprinted, each one hand cut and formed. Are they perfect? Of course not. Does that matter too much to me? Not at all. Did I enjoy the solitude and zen of making pasta on a beautiful sunny day, listening to my Louis Prima? Absolutely. What are you making today??

Hello pasta lovers! Today - tortelloni!! A classic pasta filled with cow’s milk ricotta, aged Parmigiano Reggiano cheese, parsley, fresh nutmeg and salt. We served this in a classic butter and sage sauce with Parmigiano Reggiano on top. 👍 👍 Interestingly, in America you always see brown butter and sage sauces whereas here in Italy, it’s usually just melted butter with sage. I think that chefs trained in French cooking are inclined to take this route but in Italy, I personally haven’t come across it much. Either way - it’s delicious. In Bologna, you also see tortelloni with this filling served with a sauce called Burro e Oro, which is a tomato and butter sauce. Since this is Bologna (la grassa), we are talking about a ton of butter. (Equal parts butter and tomato in some recipes!) 😳 😳 If you saw my two posts yesterday on Sagne ‘Ncannulate (a delicious pasta shape from Puglia), you know that I spent the day playing in the kitchen with a friend. We made pasta all afternoon, preparing both egg pasta and durum wheat dough. It was a good day.
